I love your question. I hadn't thought it about it, so I appreciate that.
I suppose that it is like the "eye in the sky" which I wrote about in this post (click). The great "all that is" which is everywhere. I have captured many eyes, and I've noticed others do as well. I feel in many instances it is simply the life force that is the earth, the trees, etc., looking back at me as I am looking at it.
But I'm open to other interpretations and suggestions. What are your thoughts?
