Peanut Satay Sauce
Ingredient Quantity Creamy peanut butter 1 cup Coconut milk (full fat) 1 can Soy sauce 4 tablespoons Lime juice 2 tablespoon Brown sugar or honey 2 tablespoon Sriracha. 1 teaspoon Fresh ginger, minced 1 teaspoon Garlic, minced 2 clove Curry Powder 2 teaspoon
Heat a small splash of oil in a saucepan over medium heat. Sauté the minced garlic and ginger for about 1 minute until fragrant. Stir in the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and sriracha. Whisk constantly until the sauce is smooth and begins to simmer. Reduce heat to low and simmer for 2 to 3 minutes until thickened. Remove from heat and stir in a bit of warm water or extra coconut milk if the sauce is too thick.
